What do you like to eat for breakfast? Do you like to eat yogurt with granola, a smoothie for on to go or you just love rusk? I enjoy to vary my meals for breakfast sometimes. Of course I can choose something different with these three options but make sure to make these banana egg pancakes when you are ready for something different. Simple, healthy and tasty! These delicious banana egg pancakes are my main breakfast meals for the weekends. Plus: they are not complicated to make because they only exist out of 2 ingredients: egg and banana. Therefore they are super healthy because you are not using any sugar, salt or flour. Of course they still contain natural fruit sugars of the banana but this is what makes the pancakes nice and sweet.
What do you need?
(For about 5 small pancakes)

How to make these pancakes?
Take a bowl, cut the banana into small pieces to thereafter mash it. Beat the egg and add it to the mashed banana. Mix until smooth. Optionally you can add some cinnamon but you can put this on the pancakes once finished as well. The mixture is done now. Tip: you can also put the banana and the egg in the blender to mix.
Heat butter or coconut oil in a pan. Take care of oiling the pan sufficiently to prevent sticking. Scoop the batter into the pan with a spoon. Set the stove on medium heat and cook the pancakes until the top becomes dry. Then turn it with a spatula and fry the other side. Cook the pancakes until they are browned. Repeat until all batter is used. I usually cook two small pancakes at the same time.
Put the pancakes on a plate and garnish them with something delicious. Also you can choose to just sprinkle the pancakes with only some cinnamon because the bananas already taste very sweet.
With oatmeal, cocoa, blueberries, strawberries…
This recipe is not only delicious and healthy, but you can invent as many variations as you like. I sometimes add a spoonful of baking soda or oatmeal in the batter, so they fill me up just a little more. My favourite is banana egg pancake with cocoa and grated coconut. Just add one tablespoon of cocoa and sprinkle the pancakes with some grated coconut when ready. Sometimes I also put in some blueberries. You can eat these delightful fluffy pancakes as breakfast, lunch, snack or dessert. If you make these pancakes as dessert then try out a topping of strawberries, lemon curd and ice. I find this recipe simply fantastic!
