What you can make with leftover gingerbread nuts

The  wonderful Santa’s night is here and it means that huge quantities of gingerbread nuts, spiced nuts, chocolate letters and almond spiced gingerbread have been eaten. But what to do with all the leftovers? You  might think ‘just eat it al’ the way it is, but there are also nice recipes to spice up the remaining Santa delicacies.

Gingernut pie with chocolate milk

Gingernut pie

What do you need?

  • 400 grams gingerbread nuts

  • 120 grams melted butter

  • 200 ml milk

  • 250 grams marshmallows

  • 1 spoonful cocoa powder

  • 600 ml whipped cream

  • 1 spoonful sugar

  • Chocolate covered gingerbread nuts

How do you make this pie?

  1. Use a quiche baking tin with a separate bottom piece of 28 centimeter and grease it.

  2. Preheat the oven at 170 C and crumble the gingerbread nuts with a food processor.

  3. Add the crumbs to the melted butter and mix it until it turns into a dark mass.

  4. Pack the crumbs tightly together in the baking tin on the bottom piece and half way the sides. Bake in the oven for 8 minutes, this will make the bottom somewhat less moist.

  5. Mix the cocoa powder and milk into chocolate milk and add the marshmallows. Melt the marshmallows on a low fire and let the liquid cool down for approximately 60 minutes.

  6. Whip 300 ml whipped cream without sugar until you get a firm mass and mix it with the chocolate milk.

  7. Fill the baking tin and let it cool for a half hour in the fridge.

  8. In the  meantime you whip the remaining whipped cream with a spoonful sugar until it has stiffened up.

  9. Spread the whipped cream on the top of the pie, crumble a few gingerbread nuts and put it as a final topping over the whipped cream.

Gingerbread tiramisu

Gingerbread Tiramisu

What do you need?

  • 100 ml mascarpone

  • 20 grams sugar

  • 100 ml vanilla custard

  • 100 ml thick yogurt

  • 100 ml cold strong coffee

  • 25 ml Tia Maria

  • 90 gingerbread nuts

  • Cocoa

  • Piece of chocolate

How do you make it?

  1. First of all, whip the mascarpone and the sugar after it has been put together. After that you add the thick yogurt and the vanilla custard.

  2. Mix the cooled coffee and the Tia Maria.

  3. Dip half of the gingerbread nuts in the coffee/Tia Maria mix, get them out when they have absorbed the liquid. Make equal small portions of gingerbread nuts and put them in 4 glasses.

  4. Cover them with a good layer of the mascarpone mix.

  5. Dip the rest of the gingerbread nuts also in the coffee/Tia Maria mix and put them on top.

  6. Put a thin layer of mascarpone on top.

  7. Let the tiramisu stiffen up in the fridge and as a final touch add some cocoa, small pieces of chocolate and gingerbread nuts as decoration.

Truffle gingerbread nuts

Truffle Gingerbread

What do you need?

  • Gingerbread nuts

  • White chocolate

  • Cocoa

How do you make it?

  1. Cover a baking tray with baking paper. Melt the white chocolate in the microwave or in a dish floating in a pan with hot water.

  2. Dip the gingerbread nuts in the melted white chocolate and put them on the paper on the baking tray.

  3. Lightly powder them with cocoa and let them stiffen up until the chocolate is solid and the cocoa stick to the gingerbread nuts.

Keep the truffle gingerbread nuts in the fridge to keep them fresh and tasty!
